Let me tell you no matter how good your tamale recipe is you still need to know about the perfect balance of preparing the Masa, keep it moist and soft you must put enough filling, lots people out there do not use enough filling, and you need lots of tasty sauce. If you get these three steps right then all that's left is not to over cook your tamales. Remember the best tamales to eat are the ones striate from the pot!
